The Cinisara cow
The Cinisara cow keeps her calves close throughout the year so she can teach them how to select the wild herbs best suited to their diet.
This knowledge, passed down from mother to offspring, gives the milk unique organoleptic and nutritional qualities.
From 2019 to 2022, Giulia, the Cinisara cow, along with Bella her goddaughter and a young calf, lived on the farm, fertilising the land beneath the olive grove.
